Brinjal is also known as eggplant is one of the favorite among many. It is a low calorie veggie that has some unique nutrients like iron and minerals. It is most commonly used in Indian cuisine to make curry, gravy, stir fry etc.
Brinjal Masala Curry is an amazing mix of
brinjals with spices stuffed into them, cooked in gravy. It is a unique Andhra
based Indian dish and is savored by vegetarian food lovers. This recipe is

- Shallots - 6 no’s
- Cumin Seeds – 1 tsp
- Coriander seeds – 1 tsp
- Oil – 3 TSP
- Garlic cloves - 6 no’s
- Sliced Ginger - 1 piece
- Green chili - 2 no’s
- Red Chili - 6 no’s
- Peppercorns - 1 tsp
- Chopped tomato - 6 no’s
- Grated Coconut - 1 cup
- Turmeric powder - 1/2 tsp
- Chili powder - 2 tsp
- Brinjal - 1/2 kg
- Cinnamon
- Cloves
- Curry leaves
- Water
- Salt
Step 1:
After slitting the top edge cut the brinjal into 4 slices and soak in a water bowl adding 1/4 spoon of salt.
Step 2:
Ground masala paste preparation - Heat the pan adding 1 tsp of oil and add coriander seeds, cumin seeds, shallots, garlic cloves, ginger, green and red chili, peppercorns, Chopped tomato and salt. Mix them well and cook for 5 mins. Add half cup of grated coconut and cook for 2 more mins. Let it cool and after that grind them all and by adding some water make a fine ground masala paste.
Step 3:
Final preparation - Heat the pan adding 2 tsp of oil followed by a piece of cinnamon, few cloves and some curry leaves. Add sliced brinjal into it and mix well. Roast the ingredients well by adding a pinch of salt followed by turmeric and chili powder. After a min add the ground masala paste into it. After adding little water to the mixture close the pan and let it cook for about 10 mins.
You are now done with the preparation. Garnish the dish with chopped coriander leaves.
This can be served as side dish and goes well with rice, roti, naan and chapatti.
